Sausage -n- Peppahs, Nu Yawhk Style!

Growing up in Upstate NY (Hudson Valley)  as a kid, Sausage -n- Peppers was a staple dish. It was done both as a skillet meal and also as a sandwich.

The delicious aroma of them cooking on a flattop wafted around every single festival, carnival, and fair in the entire area and made every one of those events that much more enjoyable. It’s something that brings back so many happy memories.

Every now and then I get a hankering for a taste of home and today was one of those days. Hence tonight’s dinner.

So simple… slice up a green bell pepper. You can use red, yellow, etc., but you’ll miss out on the authentic flavor. Go with green peppers. Slice up a yellow or white onion into half moons. Set aside.

Sauté mild Italian sausage on medium low heat until mostly cooked. Add the peppers and onions and turn up the heat to medium. I make a ring on sausage around the pan and put the veg in the middle. Cover for five minutes. Then remove the lid and stir the veg until they get soft and sweeter. Toss on some salt, black pepper, and Italian seasoning, then stir. Once the veg is broken down a little, mix the veg and meat together to meld the flavors for about five more minutes.

Den… ya slice dat sub style roll an’ stuff wit’ dem sausage-n-peppahs an’ friggin’ enjoy ovah deah! Fugghedabowdit!
